Sahti – WHAT IT IS?
Tradition of brewing sahti is one of the oldest alive beer traditions in the world having history of about 2000 years. Categorized under label of farmhouse ale, sahti is brewed mainly from barley malt with some malt from wheat or rye used occasionally.
Sahti is usually not hopped or Finnish farmhouse hops of low bitterness are used. Instead, juniper branches are usually used in brewing to give it some characteristic aroma. The characteristic banana-taste giving esters are produced by the baking yeast varieties used in fermentation. Sahti is not carbonated and is best served well chilled at 0-4°C.
Sahti has status of protected designation of origin in European union. This means that commercially sahti can be brewed only in certain geographical area in Finland with certain methods and ingredients. Estonian koduõlu and Swedish gotlandsdricka are closest resembling beers with old traditions of their own.
While distilling is the heart of what we do, Tuori Distillery is located in the traditional sahti area. Around here few are the people here who have not at least tasted it and therefore it is just appropriate that we participate in nurturing this tradition. Our local customers, knowing what they want, are our harshest judges. Therefore, we brew our sahti with pride and diligence with traditional methods to quench thirst of both local patrons as well as curious beer-lovers from everywhere.
